Low-Country Oak Tree Cake June 2, 2010

This past weekend, Courtney and Kristin created a first for Croissants…an oak tree cake! We were asked by one of our customers (who used to get his cakes from the Cake Boss!) to create a 2D cake that resembled a real South Carolina Live Oak.  Needless to say, we were excited.  The girls experimented with a few options for the Spanish moss, which real live oaks are covered in.  After airbrushing cotton candy to make it green, they decided it wasn’t the right look.  So, after eating the rest of the cotton candy and gettting a great sugar buzz going, they found that rice noodles would do the trick!  They have no taste but they look just like moss when sprayed green so it was a great choice.  Homemade modeling chocolate was used to cover the red velvet trunk and the leaves were cut from fondant.  The end result was not only tasty but beautiful as well.  Next we want to try a 3D!
